I think the Markhor has to be researched, so it won't show up early in the game unless you use the Steve Serafino cheat (see THIS thread for ZT1 Cheats and Easter Eggs).

 

I've had the problem with the Unicorn before. I think it was mostly when I had made my exhibit, left the game, then came back. I had to re-name the exhibit Xanadu (just select and hit the Enter key) before they would show up in the adoption menu again. As for only the male showing up, I have no idea what would cause it, but I think it's happened once or twice, just can't remember what I did about it.
